Birth day cake - Snake


Total Time: 1 hours 20 mins

Cook Time: 20 mins


INGREDIENTS:

  • 1 1/2 cups brown rice flour (or any mixture of brown rice, oat, and millet)
  • 3/4 cup tapioca flour
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • 3 teaspoons baking powder
  • 1 teaspoon guar gum
  • 3 tablespoons chia meal or flax meal (optional, but adds a bit of nutrition)
  • 4 eggs
  • 1 1/4 cups preferred sugar
  • 2/3 cup allowed mayonnaise
  • 1 cup non dairy milk of choice
  • 2 teaspoons vanilla extract


Frosting:
  • 1/4 cup Earth Balance Margarine or butter
  • 1/4 cup Spectrum Shortening
  • 2 cups corn-free powdered sugar
  • 2 tablespoon honey (optional)
  • 2-3 tablespoons non-dairy milk to thin to desired consistency
  • 2 teaspoons vanilla



DIRECTIONS:

Preheat oven to 350 degrees.  Whisk the dry ingredients together though the chia meal, set aside.  In a mixer, beat the eggs, sugar, and mayo.  When well mixed, add in the non dairy milk and vanilla.  Pour the dry ingredients in and beat well.  Pour into prepared pans.  Bake: a bundt pan takes about 45 minutes, 9″ circles take about 30.  When a knife inserted in the center comes out clean, it is done.  Cool for about 10 minutes before inverting on a cooling rack.  Cool completely before frosting (I like to freeze the cake to make it easier to frost).

For the frosting: beat the butter and shortening, blending well.  Beat in the remaining ingredients, scraping the sides down as necessary.  Beat on high for 5-7 minutes to get extra fluffy frosting.
Assembling  the snake cake:

Bake your cake in a bunt pan, cutting in half


Slide the two pieces in opposite directions


Push together to form a snake


Frost with desired frosting…notice…no smooth frosting…


Using a muffin cut in half, create the mouth, bottom first


This piece was a bit thick, so cut it down.  Use toothpicks to support the mouth open a bit

Vanilla Birthday Cake

Ingredients:



Cake Batter:


  • 1 cup unsalted butter, softened
  • 2 cups sugar
  • 4 large eggs, at room temperature
  • 1 1/2 cups self rising flour
  • 1 1/4 cups all-purpose flour
  • 1 cup milk
  • 1 teaspoon vanilla



Butter-cream Frosting:

  • 1 cup unsalted butter, very soft
  • 8 cups confectioners' sugar
  • 1/2 cup milk
  • 2 teaspoons vanilla









Directions:

  • Preheat oven to 350°.

  • Grease and lightly flour three 9 inch round cake pans, then line the bottoms with waxed paper.

  • In a large bowl, on the medium speed of an electric mixer, cream the butter until smooth.

  • Add the sugar gradually and beat until fluffy, about 3 minutes.

  • Add the eggs one at a time, beating well after each addition.

  • Combine the flours and add in four parts, alternating with the milk and the vanilla extract, beating well after each addition.

  • Divide batter among the cake pans.

  • Bake for 20 to 25 minutes or until a cake tester inserted into center of cake comes out clean.

  • Let cakes cool in the pans for 10 minutes.

  • Remove from pans and cool completely on wire rack.

  • If you're making cupcakes, line two 12-cup muffin tins with cupcake papers.

  • Spoon the batter into the cups about three-quarters full.

  • Bake until the tops spring back when lightly touched, about 20 to 22 minutes.

  • Remove cupcakes from pans and cool completely on a rack before icing.

  • When cake has cooled, ice between the layers, then ice top and sides of cake.

  • To make the icing - place the butter in a large mixing bowl.

  • Add 4 cups of the sugar and then the milk and vanilla.

  • Beat until smooth and creamy.

  • Gradually add the remaining sugar, 1 cup at a time, until icing is thick enough to be of good spreading consistency (you may very well not need all of the sugar).

  • If desired, add a few drops of food coloring and mix thoroughly.

  • Use and store icing at room temperature, as icing will set if chilled.

  • Can store in an airtight container for up to three days.

      Delicious Chicken Pot Pie

      Cook Time: 45 mins





      INGREDIENTS:

      • 1 cup potato, diced
      • 1 cup onion, diced
      • 1 cup celery, diced
      • 1 cup carrot, diced
      • 1/3 cup melted margarine
      • 1/2 cup all-purpose flour
      • 2 cups chicken broth
      • 1 cup half-and-half
      • 1 teaspoon salt
      • 1/4 teaspoon pepper
      • 4 cups chicken, cooked and chopped
      • 2 pie crusts






      DIRECTIONS:



    • Preheat oven to 400°F.

    • Saute onion, celery, carrots and potatoes in margarine for 10 minutes.

    • Add flour to sauteed mixture, stirring well, cook one minute stirring constantly.

    • Combine broth and half and half.

    • Gradually stir into vegetable mixture.

    • Cook over medium heat stirring constantly until thickened and bubbly.

    • Stir in salt and pepper; add chicken and stir well.

    • Pour into shallow 2 quart casserole dish and top with pie shells.

    • Cut slits to allow steam to escape.

    • Bake for 40-50 minutes or until pastry is golden brown and filling is bubbly and cooked through.

      Ground Beef Gyros



      Total Time: 22 mins

      Prep Time: 10 mins
      Cook Time: 12 mins






      Ingredients:

      1. 1 (8 ounce) container plain yogurt
      2. 1/3 cup chopped seeded cucumber
      3. 2 tablespoons finely chopped onions
      4. 1 garlic clove, minced
      5. 1 teaspoon sugar

      Filling:

      • 1 lb lean ground beef (I use ground turkey)
      • 1 1/2 teaspoons dried oregano
      • 1 teaspoon garlic powder
      • 1 teaspoon onion powder
      • 1 teaspoon salt (optional)
      • 3/4 teaspoon pepper
      • 4 pita breads
      • 3 cups shredded lettuce
      • 1 large tomato, chopped
      • 1 small onion, chopped









      Directions:

      In a bowl, combine first 5 ingredients.

      Cover and refrigerate.

      In separate bowl, combine ground beef and seasonings.

      Mix well.

      Shape into 4 patties.

      Grill, covered, (you can also use a toaster oven or broil these) over medium to high heat for 10 to 12 minutes or until meat is no longer pink, turning once.

      Cut patties into thin slices.

      Stuff into pitas.

      Add lettuce, tomato, and onion.

      Serve with yogurt sauce.

      Tilapia Parmesan


      Total Time: 35 mins



      Prep Time: 15 mins
      Cook Time: 20 mins



      Ingredients:




      • 2 tablespoons lemon juice
      • 1/2 cup grated parmesan cheese
      • 4 tablespoons butter, room temperature
      • 3 tablespoons mayonnaise
      • 3 tablespoons finely chopped green onions
      • 1/4 teaspoon seasoning salt (I like Old Bay seasoning here)
      • 1/4 teaspoon dried basil
      • black pepper
      • 1 dash hot pepper sauce
      • 2 lbs tilapia fillets  (orange roughy, cod or red snapper can be substituted)








      Directions:



      Preheat oven to 350 degrees.

      In buttered 13-by-9-inch baking dish or jellyroll pan, lay fillets in single layer.

      Do not stack fillets.

      Brush top with juice.

      In bowl combine cheese, butter, mayonnaise, onions and seasonings.

      Mix well with fork.

      Bake fish in preheated oven 10 to 20 minutes or until fish just starts to flake.

      Spread with cheese mixture and bake until golden brown, about 5 minutes.

      Baking time will depend on the thickness of the fish you use.

      Watch fish closely so that it does not overcook.

      Makes 4 servings.

      Note: This fish can also be made in a broiler.

      Broil 3 to 4 minutes or until almost done.

      Add cheese and broil another 2 to 3 minutes or until browned.

      Creamy Chicken Pasta

      Ingredients:


      • 2 boneless skinless chicken breasts, cut into thin strips
      • 4 ounces linguine, cooked al dente
      • 2 teaspoons cajun seasoning (your recipe, Cajun Seasoning Mix or store-bought)
      • 2 tablespoons butter
      • 1 thinly sliced green onion
      • 1 -2 cup heavy whipping cream
      • 2 tablespoons chopped sun-dried tomatoes
      • 1/4 teaspoon salt
      • 1/4 teaspoon dried basil
      • 1/8 teaspoon ground black pepper
      • 1/8 teaspoon garlic powder
      • 1/4 cup grated parmesan cheese







      Directions:


      Place chicken and Cajun seasoning in a bowl and toss to coat.

      In a large skillet over medium heat, sauté chicken in butter or margarine until chicken is tender, about 5 to 7 minutes.

      Reduce heat add green onion, heavy cream, tomatoes, basil, salt, garlic powder, black pepper and heat through.

      Pour over hot linguine and toss with Parmesan cheese.

      Fried Rice


      Total Time: 25 mins


      Prep Time: 5 mins
      Cook Time: 20 mins




      Ingredients:


      • 1 tablespoon butter or 1 tablespoon margarine
      • 2 eggs, beaten
      • 1 tablespoon butter or 1 tablespoon margarine
      • 1/4 cup chopped onion
      • 1/4 cup chopped green pepper (optional)
      • 2 cups rice, prepared and cooled
      • 1/2 cup cooked pork (optional) or 1/2 cup cooked shrimp (optional) or 1/2 cup cooked chicken (optional)
      • 1/4 cup soy sauce
      • 1/2 cup cooked peas







      Directions:


      Melt 1 tablespoon butter in skillet or wok.

      Scramble eggs in butter, breaking up the cooked eggs into small pieces.

      Set aside.

      Melt 1 tablespoon butter in skillet or wok.

      Saute onions and/or green peppers in butter for 3 minutes.

      Combine eggs, onions, rice, and meat.

      Stir in soy sauce until color of rice is uniform.

      Stir in peas.

      Heat only until warm.
